The concept was primarily crafted by Tim Wildin, Chipotle's director of concept development, who drew inspiration from his upbringing in Bangkok and his extensive exposure to authentic Southeast Asian flavors. Wildin's goal was to incorporate traditional Southeast Asian dining elements into a format that mirrored Chipotle's successful business model of customizable and quick-service meals.

Menu and Dining Experience

The dining experience at ShopHouse was centered around a customizable menu, allowing patrons to select a base of chilled rice noodles, jasmine rice, brown rice, or salad. This base could then be topped with a choice of protein such as meat or tofu, complemented by a variety of vegetables, sauces, garnishes, and toppings. The restaurant also offered several recommended combinations to guide customers in creating an authentic Southeast Asian meal.

Despite its initial success, ShopHouse eventually closed all of its locations. The leases for these restaurants were acquired by Gosh Enterprises and converted into locations for Bibibop Asian Grill, another fast-casual chain focusing on Korean-inspired dishes.
